The Innovative Approach of Holyrood Distillery in Whiskey Making

Whiskey, at its core, is distilled beer. However, Holyrood Distillery is shifting the narrative by reimagining the distillation process using innovative brewing techniques. Unlike traditional distilleries, Holyrood approaches washmaking with a brewer’s mindset, focusing on experimenting with different grains, barley varieties, specialty malts, and yeast strains to create unique flavors in their whiskey.

Located in Edinburgh, the historical capital of Scotland and a renowned hub for malt whiskey production, Holyrood Distillery marks the first new whiskey distillery in the city in over a century. Situated in the heart of a region with a rich brewing heritage, Holyrood leverages its proximity to underground wells that were once pivotal in supplying water for beer production. This unique setting enables Holyrood to merge the traditions of brewing and whiskey making, paving the way for a fresh, creative approach to Scotch.

Led by distillery manager Calum Rae, who brings a background in brewing to the table, Holyrood boasts a team of skilled distillers trained at the renowned Heriot-Watt University. Embracing a spirit of experimentation reminiscent of craft breweries, Holyrood encourages a cycle of “test, learn, improve, repeat” in their quest to push the boundaries of whiskey production. With each experiment in distillation taking years to come to fruition, Holyrood’s approach highlights the patience and dedication required to create exceptional aged whiskey.

Despite the regulatory requirement for whiskey to be aged a minimum of three years before being labeled as “Scotch,” Holyrood has released only two expressions – Arrival and Embra. These limited releases offer a glimpse into the vast spectrum of flavors that Holyrood has explored through its innovative brewing practices. With plans for a tasting room that mirrors the atmosphere of craft beer establishments, Holyrood aims to provide consumers with a diverse selection of drams that showcase the array of unique flavor profiles they have developed.
