Exploring Fieldtrip: A Culinary Adventure in Atlantis Paradise Island

Atlantis Paradise Island in the Bahamas has recently introduced Fieldtrip, a new fast casual eatery led by acclaimed chef JJ Johnson. This restaurant offers a unique dining experience with a focus on rice bowls inspired by various cuisines, such as Asian and southern barbecue. What sets Fieldtrip apart is its emphasis on using heirloom grains, fresh vegetables, and unprocessed rice, creating dishes that are both nutritious and flavorful.

At Fieldtrip, diners can enjoy a selection of rice bowls paired with an array of proteins, including braised beef, fried chicken, fish, and chickpeas. In addition to the main dishes, guests can indulge in delectable sides like sweet plantains with fire-roasted red peppers and hot honey, as well as crab pockets filled with blue crab, garlic herb cream cheese, and sweet and sour sauce. To complement the meal, Fieldtrip offers a variety of house-made beverages, such as pineapple ginger lemonade, dragon fruit lemonade, and sorrel made with hibiscus flower.

Chef JJ Johnson, the mastermind behind Fieldtrip, is no stranger to recognition in the culinary world. He has received the prestigious James Beard Foundation Award for Best American Cookbook in 2019 for his work on the Afro-Asian-American cookbook “Between Harlem and Heaven,” co-authored with Alexander Smalls. Johnson has also made appearances on popular TV shows like Food Network’s “Chopped,” Netflix’s “Street Food,” and HBO Max’s “Selena + Chef.” His innovative approach to cuisine has earned him a spot on Esquire’s 2020 America’s Best New Restaurants list, with Fieldtrip being the only fast-casual establishment to make the cut.

Audrey Oswell, the president and managing director of Atlantis Paradise Island, has expressed her excitement about having Chef JJ Johnson and Fieldtrip as part of the resort’s culinary lineup. Johnson’s culinary creations have been well-received at Atlantis’ Nassau Paradise Island Wine & Food Festival and Table Takeover Series, showcasing his talent and creativity to a wider audience.
